Garlic Lime Shrimp Tacos with Feta Slaw

Everyone I’ve ever make these for end up loving them and wanting the recipe.  It is extremely quick ,easy and delicious and the leftovers are even better!

What you will need for the Shrimp:

1 pound cooked Shrimp

4 Limes

1/2 cup of chopped Cilantro

4-6 cloves of Garlic

2 tbsp Lime Zest

2 tbsp olive oil

Salt and pepper to taste

In a mixing bowl, mix together shrimp, olive oil, cilantro, lime juice, garlic, lime zest, salt, and black pepper. Cover and refrigerate 30 minutes before serving. The long the better which is the reason why they make great leftovers.

Feta Slaw:

1 head of cabbage julienne

12 oz of feta

1 tbsp of olive oil

1/4 cup of cider vinegar

2 tbsp of red wine vinegar

4 cloves of garlic

1/2 cup of cilantro

salt and pepper to taste

In a mixing bowl, mix together cabbage, feta,  olive oil, cider vinegar, red wine vinegar, garlic, feta, cilantro, salt, and black pepper. Cover and refrigerate 30 minutes, tossing is at least twice during that time before serving. The long the better…

Heat your tortillas and load them up with that yummy shrimp and wicked good slaw!

Add some fresh jalapenos for a kick, sour cream if that’s your thing, avocado slices to pump it up or fajita veggies for a real treat!
